The Ultimate Trick or Treat: Vampire Teeth Cookies

The ultimate trick or treat to make with the family for all your scary Halloween parties! Deceptively clever, these gnashers are made from chocolate chip cookies, cut in half and sandwiched with red coloured buttercream and mini marshmallows. The fangs are created with slivered almonds. All together now… “Trick or Treat?” (Not that easy to say if you actually have one of these stuffed in your mouth at the time!). Mich Turner MBE

BITE SIZE BEASTIES… THAT BITE BACK!

This project was created & written by our baking ambassador, Mich Turner MBE. Mich’s recipe makes 24 – 30 vampire teeth cookies, depending on how generous you are with portion sizes!

Ingredients for Chocolate Chip Cookies:

  • 150g unsalted butter (softened at room temperature)
  • 80g golden caster sugar
  • 80g light brown sugar
  • 1 large whole beaten egg
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • 2 tsp vanilla bean paste
  • 225g dark plain chocolate chips

  • Mini white (and pink) marshmallows
  • Whole blanched almonds (cut in half, lengthways)

METHOD — COOKIE BASES:

1. Preheat the oven to 180°C and line 2 baking sheets with non-stick baking parchment.

2. Cream together the butter and sugars until pale and fluffy.

3. Add the beaten egg.

4. Stir in the vanilla bean paste.

5. Sieve together the flour and bicarbonate of soda and fold into creamed mixture.

6. Stir in the chocolate chips.

7. Drop large teaspoons of mixture onto the prepared baking sheet – spaced well apart.

8. Bake in the oven for 8 – 10 minutes until baked and golden brown on the edges.

9. Allow to cool for 2 minutes before lifting out onto a wire rack to cool.

METHOD — BUTTERCREAM:

1. Cream together the softened butter and icing sugar until light and fluffy. Add 1 – 2 tbsp of hot water if the buttercream is a little stiff.

2. Stir in the vanilla extract and red food colouring to achieve a dark red colour.

METHOD — DECORATION:

1. Cut the biscuits in half using a large, sharp knife.

2. Spread the biscuits with red buttercream using a cranked handle palette knife.

3. Position the white marshmallows around the curved edge of the biscuit, pushed into the buttercream for support.

4. Position additional white (or pink) marshmallows behind this first row of marshmallow teeth for support.

5. Fix the top biscuit half into position and press down to secure.

6. Press 2 almond halves between the marshmallows to create the fangs.
