2017 Colour Trends – Marbling with Cassie Brown

“To keep inspired I’ve been researching 2017 and the possible trends which may approach the upcoming year for us cake makers. For sugar artists, colour plays an important role for our designing and creative masterpieces, and after some time researching I’m happy to say Kale green and especially shades of grey are the focus of the new year according to Vogue Live and Bentley motors, who have reported it in their latest issues and media releases. These colour trends will also be incorporated in this year’s cake trends. Here are some beautiful marbled cakes I designed, shot in-house here at C&C HQ just for you! Enjoy… 

The commencing year will thrive on healthy eating as well as the continuous evolution of cake equipment and gadgets so colours like grey and green will be really popular in the commencing year. The wedding cake industries, along with bridal fashion, are also taking on light grey this year. We are already seeing bridal fabrics and shades of grey lace on the cake works at bridal fairs so it’s certainly inspiring us cake designers. I can also see the marbling effect really taking on as a trend this year.

2017 is the year of earthy colours, as they will be seen on catwalks, cars, home stores and will also be seen in the cake industry. This year in my work I’ll be incorporating earthy colours in my work as an all over covering on cakes and highlighting features.

I have been playing around with different techniques and I really love the marbled effect of this cake I have made, and by finishing the look by adding pale pink flowers, I think it looks stunning! I also love seeing what patterns you can create when making the marble effect; it never looks the same twice! To achieve this look I simply use black gel food colouring and add a little to the sugar paste. I then mix it gently into the paste. I cut the paste in half to see the beautiful marbled effect, then roll out the paste and cover the cake as I normally would. On the little cupcakes I have used Karen Davies’ broach molds, which I think adds a touch of elegance to the grey marble.

My advice is to keep a keen eye open on all sorts of themes and ideas to get inspired by the year ahead. Look for the latest trends and incorporate them in your cake making – remember inspiration is all around us, you just need to take the time to see it. Stay creative!” – Cassie Brown
